Sweet Potato Pasta and Marinated Mushrooms

Sweet potato pasta and marinated mushrooms
Ingredients
Marinated mushrooms
- 4 mushrooms
- 1 teaspoons sesame oil
- 1 teaspoon tamari
Pasta sauce
- 2 tablespoons of nutritional yeast
- 1 tablespoon agave/maple syrup/raw honey
- 1 tablespoon miso
- 1 tablespoons zucchini hummus – see recipe below
- 1 peeled garlic clove
- 2 tablespoons mustard
- 3-5 tablespoons water, as needed
- 1 tablespoon sesame seeds
Sweet potato pasta
- 1 peeled sweet potato
Instructions
To make the mushrooms: slice them really thin then rub in the oil and tamari. Put them in a warm spot (you can put in the oven at its lowest temperature) while you prepare the noodles.
To make the sauce: blend all ingredients except sesame seeds together until smooth. Then toss in the sesame seeds by hand. Set aside.
To make the pasta: put the sweet potato through your spiral slicer (spirooli) or slice on a mandolin, cover them with the sauce and let them marinate. The noodles will soften and pick up more flavor.
When you are ready to eat, toss the mushrooms through the pasta, and sprinkle on some more sesame seed.

Zucchini Hummus
Ingredients
- 2 medium zucchini, chopped
- ½ cup lemon juice
- 1 teaspoon salt
- 1 ½ teaspoon cumin
- 1 cup raw tahini
- 4 tablespoons olive oil
- ½ cup raw sesame seeds
Instructions
Put all ingredients in your blender and blend to a smooth paste.

Caring for your skin during a detox is essential.
Your skin is the largest organ of your body and is one of the main organs via which toxins are eliminated.
For this reason it is important to brush your skin daily using a skin brush before you bathe. This will stimulate your lymph system, promote circulation, clean blocked pores and remove dead skin from your body.
Another pampering alternative while you are on a detox is to treat yourself to a hammam.
This traditional middle eastern bath uses steam, heat and humidity at varying temperatures to cleanse the body.
The steam and humidity in a hammam will open the pores eliminating the toxins.
It is best then followed by an exfoliation treatment with natural soaps.
It’s the perfect way to treat and reward yourself while you are on a detox!

Detox Thai Coconut Soup

I just had to try this recipe from Chef Tina Jo and I am so glad I took the time. The perfect recipe for your detox journey.
As I didn’t have time to find 4 young Thai coconuts in Barcelona and do not have a dehydrator I have adapted the recipe to suit!
You can make it as a raw soup but I just warmed the finished broth through before serving.
I also layered the bowl with fresh bean sprouts to give a little crunch.
The result was a fresh, nourishing, satisfying and delicious meal!
Thai Coconut Soup
Ingredients
Soup Broth
1 400ml can of organic coconut milk
2 cups coconut water
1 tablespoon agave nectar
1/2 tablespoon Thai red curry paste
1 clove garlic, minced
1 spring onion, sliced
2 teaspoon fresh lime juice
1/2 teaspoon lime zest
4 teaspoons white miso
2 teaspoon tamari
1/2 teaspoon Himalayan salt
1 tablespoon ginger, grated
Vegetables
1/2 cup broccoli, julienned
1/2 cup red pepper, julienned
1/2 cup fresh peas
1/2 cup bok choy, cut in thin strips
1/4 cup cilantro leaves, chopped
1/4 cup carrots, julienned
1 spring onion, julienned
Instructions
1. Place all the ingredients for the broth in a blender and process until smooth.
2. Place the broth in a saucepan on medium temperature and bring to just before boiling point.
3. Place a good handful of fresh bean sprouts in a bowl and pour soup over.
