Raw Cranberry Sauce

Whole cranberries are a deeply healing and cleansing food. But the cranberry sauce commonly purchased in cans or made on the stovetop using cups of sugar is not a healthy food. These classic versions use so much refined sugar that the cleansing properties of the cranberries are negated.
Cranberries are well known as the natural remedy for preventing and curing urinary tract infections. With natural antibiotic properties, they sweep out the bacteria buildup that causes the infections. They also cleanse bacteria from the entire digestive tract and prevent kidney stone formation. These traditional American berries are packed with antioxidants and other immune-boosting vitamins. They’re also a natural probiotic and anti-viral agent.
Cooking cranberries destroys most of these vital enzymes and antioxidants. But in this cranberry recipe, you’ll retain all of the valuable nutrients while enjoying the tart and refreshing taste of fresh raw cranberries. The apple and orange sweeten it just enough in our opinion. If you want more sweetness, try adding a little maple syrup or raw honey.
Ingredients:
(use organic when possible)
- 1 medium apple
- 1 small orange or tangerine
- 1 tablespoon orange rind
- 3/4 cup raw walnuts
- 2 cups fresh cranberries
- 2 teaspoons cinnamon
- 1 teaspoon cardamom
- 1/2 teaspoon clove powder
Method:
- Core and chop the apple leaving skin intact. Peel the orange.
- Combine all ingredients in a food processor or Vita-Mix blender and process until smooth.
- Serve immediately or chill. Will last in the refrigerator for several days.
