Asian Vegetable & Tofu Stir-Fry

Serves 4

Ingredients –

2 teaspoon peanut oil

1 small onion, cut in half, then thinly sliced

1/4 cup red capsicum strips

1/2 cup fresh broccoli

1/2 cup baby carrots

2 spring onions (white and light green parts), slivered

1 cup of soya sprouts

2 tablespoons grated fresh ginger

1 teaspoons grated fresh ginger

1 pinch red chilli flakes, or to taste 1/2 teaspoon honey

2 1/2 tablespoon light soy sauce

1 packet firm tofu, well drained and cut into strips

Directions –

In wok or large, heavy skillet, heat oil over medium-high heat. Lightly brown tofu, remove from heat and set aside.

Add onion and capsicum to wok and stir-fry 1 minute. Add broth and bring to a boil.

Add broccoli, carrots and spring onions and stir-fry 2 minutes. Add ginger, red chilli flakes and honey; cover and cook until vegetables are crisp and tender, about 2 minutes.

Meanwhile, in small bowl, mix soy sauce and 2 1/2 tablespoons water until well blended.

Add to stir-fry and mix gently, then add tofu strips and toss gently.

Cook, stirring occasionally, just until heated through. Serve right away over brown rice.
